I made this for supper last night and we all loved it!
Kielbasa and Potatoes
Ingredients:
Canola oil – about an 1/8 of a cup
4 to 5 medium potatoes, peeled and cut into 1 inch chunks
1 med onion, coarsely chopped
2 green bell peppers, chopped into 1 inch pieces
1 16 oz pkg kielbasa sausage, cut into ½ inch thick slices (next time I will use turkey kielbasa – I just happened to have the regular on hand)
Seasonings:
Garlic powder
Onion powder
Lawry’s seasoning salt
Black pepper
Cook potatoes and onions in oil on med-hi heat for 15 minutes, stirring occasionally. Reduce heat to med, add bell pepper, season to taste, stir, cover with lid and cook for 5 minutes. Add kielbasa, stir around, cover and cook for 15 minutes or until potatoes are tender and onions are nice and caramelized.
Yields 4 servings.
Serve with some crusty whole grain rolls and steamed veggies.

A project I'm excited to be involved in!

I am not an organized person...
What I want to do:
On the weekend bake several varieties of homemade muffins, and corn and flour tortillas, and freeze them for later use.
What I end up doing:
Buying ultra-processed, sugar filled snacks at exorbitant prices because of lack of “time.”
What I want to do:
Be organized – have a place for everything and everything a place!
What I end up doing:
Searching the house for 15 minutes looking for the car keys I just used the day before!
What I want to do:
Enjoy my various craft and swap projects by working on them a little each day.
What I end up doing:
Mad-dash, manic, snip, glue, sign, post-office, WHEW!
What I want to do:
Wake up early enough to enjoy 30 minutes of quiet and not be rushed through my morning.
What I end up doing:
Hit the snooze at least 3 times, quickly shower, brush on just enough make-up to not be scary, wake Stephen up, search the closet for something not wrinkled, wake Stephen up again, throw very wrinkled shirt in the dryer with a wet cloth, brush teeth, start to make coffee, ask Stephen why he is still sitting on the edge of the bed, get still wrinkled shirt out of dryer and put it on, yell at Stephen to please, “HURRY”, try to fill up coffee travel mug – realize I didn’t finish making the coffee…….
I detect a pattern!

February 10, 1990
It was a Saturday. There was a Valentine’s Dance. My hair was freshly hot-rolled and teased. The new gauzy, ivory-colored blouse I had purchased for the occasion was tucked neatly into my cornflower blue trousers. The tall young man walking up to our porch was tall, with twinkling blue eyes, and looked ‘oh so cool’ in his tight-rolled, acid wash blue jeans. His name was Virgil, and he was my date to the Valentine’s Dance at our high school. It was our first date! Who knew we’d still be celebrating that date together 19 years later!

a little therapy
I got a little therapy today. JoAnn's therapy! I could spend hours in that store and way too much money. However, I was so good. I only bought material (on sale) for a ZSQ for my sister's birthday gift and some glue (with a 40% off coupon). Good girl, Amy!
I needed therapy today. My mom is still in the hospital, and she feels just awful. She is in heart failure and has right lobe pneumonia. They are taking her off her pain meds to "clear" them out her system. Since Mom also suffers chronic and severe pain from an arthritic spine, this is especially horrendous for her. It is just a super awful thing to see and I worry about her so much.
Prayers for my Momma are so appreciated!
